Isso é uma tendência de mercado e, sendo o sorvete muito apreciado no Brasil, o objetivo deste estudo foi desenvolver e otimizar sorvetes funcionais adicionados de kinkan. Para este efeito, foram usadas três fi bras dietéticas (amido modifi cado, polidextrose e inulina) isoladas e em diferentes combinações, a fi m de se obter um produto rico em fi bras e em compostos bioativos. Verifi cou-se que o kinkan tem boas propriedades físico-químicas, tanto em sua forma in natura e quanto processado, além de possuir elevados teores de antioxidantes. Estas características fazem com que o kinkan seja uma boa escolha para ser adicionado aos sorvetes rico em fi bras. O sorvete funcional adicionado com kinkan demonstrou boa aceitabilidade, alta atividade antioxidante e alto teor de compostos fenólicos, o que o torna uma alternativa saudável e interessante para o mercado de alimentos funcionais. No que diz respeito as fi bras utilizadas, podese concluir que, para uma melhor aceitabilidade do consumidor, deve ser adicionado inulina (0,25% a 0,75%) e polidextrose (0,25% a 0,75%) na formulação dos sorvetes.Item Elaboração e avaliação de pães de leite de fermentação natural e comercial.(2022) Santos, Janaína Gomes dos; Pereira, Patrícia Aparecida Pimenta; Vieira, Silvia Mendonça; Pereira, Patrícia Aparecida Pimenta; Vieira, Silvia Mendonça; Schmiele, Márcio; Cunha, Luciana Rodrigues daA fermentação natural é um processo que está em expansão nos dias atuais, sendo relacionado a alimentação saudável. Todavia, esses fermentos produzem metabólitos que podem provocar alterações microbiológicas, físicas, físico-químicas e sensoriais. Os pães possuem vida útil curta, sendo que esses metabólitos podem influenciar na manutenção do frescor e qualidade dos pães. Desta forma, o objetivo deste estudo foi elaborar e avaliar fermentos naturais e estudar os efeitos destes em pães de leite comparando-os o fermento comercial. Para isso, o estudo foi realizado em quatro etapas: 1ª etapa: produção do fermento natural com as farinhas integral, branca, combinando cada uma ou com mosto de cerveja ou suco de abacaxi ou iogurte natural, sendo avaliados junto com o fermento comercial quanto aos aspectos microbiológicos (contagem de leveduras e bactérias em condições anaeróbicas e em condições aeróbicas), físico-químicas (pH, compostos fenólicos e capacidade antioxidante (métodos β-caroteno/ácido linoleico, ABTS•+ e DPPH)) e capacidade fermentativa (somente dos fermentos naturais); 2ª etapa: pesquisa de mercado; 3ª etapa: produção dos pães de leite com os fermentos naturais e fermento comercial para análise no tempo inicial quanto aos aspectos físicos (salto de forno, formato dos pães, espessura da crosta, coeficiente de expansão, imagem dos alvéolos), e físico-químicos (composição proximal); 4ª etapa: análises dos pães ao longo do tempo de armazenamento avaliando quanto aos aspectos microbiológicos (contagem de fungos filamentosos e leveduras), físicos (volume específico e densidade aparente), físicoquímicos (pH, acidez, umidade e colorimétricas) e avaliação sensorial (testes afetivos e descritivos). Os resultados demonstraram que a farinha de trigo integral influenciou na microbiota dos fermentos, assim aumentando a acidez, além de que o fermento com mosto de cerveja obteve maior fator de proteção antioxidante, na capacidade fermentativa alguns fermentos apresentaram melhor estabilidade ao aumentar a temperatura. A pesquisa de mercado verificou que os pães de leite de fermentação natural terão boa aceitação no mercado. Nas análises dos pães, a acidez foi fator preponderante para os resultados das características físicas, físico-químicas e microbiológicas, sendo que os pães de fermentação natural com maior valor de acidez obtiveram maior prazo de validade. However, the microorganisms present produce metabolites that can cause changes in the breads. Thus, the objective of this work was to evaluate the effects of substrates and types of wheat flour on microbiological characteristics, pH values, total phenolic compounds, antioxidant capacity and fermentative capacity of different types of sourdough, comparing them with dry yeast. In this way, six sourdough were elaborated, diversifying the type of wheat flour (whole or white) and the substrate (beer wort, pineapple juice or natural yogurt), being evaluated in the microbiological aspects (yeast count, bacteria under anaerobic conditions and under aerobic conditions), physicochemical (pH, phenolic compounds and antioxidant capacity (β-carotene/linoleic acid, ABTS and DPPH)) and fermentative capacity (only in sourdough). In view of the results obtained, it was observed that both white wheat flour and whole wheat flour, with the substrates yogurt, pineapple juice and brewer's wort, showed differences in microbiological characteristics, in pH values, in the content of compounds total phenolics, antioxidant capacity and fermentative capacity compared to dry yeast, with whole wheat flour, pineapple or beer wort providing microbial diversity, as well as lowering the pH. WY (white wheat flour and yogurt), WP (white wheat flour and pineapple) and IW (whole wheat flour and beer wort) sourdough were more resistant to temperatures (25 °C, 30 °C e 35 °C).Item Food and behavior profile of children with autism spectrum disorder (ASD) in city of Ouro Preto/MG.(2023) Santos, Késia Regina Ferreira; Gomes, Bruna Letícia Oliveira; Vieira, Silvia Mendonça; Ribeiro, Marcelo Carlos; Pereira, Patrícia Aparecida PimentaAutism is a developmental disorder that affects communication, behavior, and social interaction. Autism symptoms may include delayed language development, difficulty making eye contact, repetitive movements or behaviors, and sensitivity to certain sensory stimuli. Therefore, the objective of this study was to evaluate the dietary and behavioral profile of children with Autism Spectrum Disorder (ASD) in city of Ouro Preto/MG. For this, the medical records of 11 children/young people assisted by the Association of Parents and Friends of the Exceptional (APAE) and the Psychosocial Care Center (CAPSij) in Ouro Preto/MG were evaluated. In addition, the responses obtained by parents and/or guardians about the dietary and behavioral profile of these individuals assisted by the institutions were evaluated using a questionnaire. The results were analyzed using word clouds and frequency analysis. In view of this, it is concluded that the dietary profile of children/young people with ASD is marked by food selectivity and that the main sensory aspect related to selectivity is texture, and that the foods most consumed by this group are industrialized foods, sugary foods and foods with low nutritional value. The least consumed are vegetables and fruits. In addition, the overload of mothers of children/young people with ASD was evident, being related to the great dependence of individuals on the mother.Item Orange albedo flour as a fat replacer in beef burgers : adding value to citrus industry by-products.(2020) Silva, Lívia Bicalho Ferreira; Miranda, Camila Neves; Santos, Mirian dos; Pereira, Patrícia Aparecida Pimenta; Cunha, Luciana Rodrigues da; Vieira, Silvia Mendonça; Gandra, Kelly Moreira BezerraDietary fiber is an important component to improve the nutritional appeal of meat products, and it could be obtained from by-products of the citrus industry. Considering that orange albedo was not sufficiently addressed in meat products, the purpose of this work was to evaluate the influence of the orange albedo flour as an animal fat substitute in beef burgers. Five formulations were developed with different substitutions of pork fat by the orange albedo flour (0; 25; 50; 75; and 100%). The analyses carried out were the proximal composition of orange albedo flour and beef burgers and the cooking yield, shrinkage, pH, color, sensory acceptance, and purchase intent of the beef burgers. The results showed that the percentage of lipids was reduced by up to 70%, however, the yield parameters were negatively affected by the inclusion of the orange albedo flour: the higher the amount of flour added, lower was the water retention capacity and higher was the shrinkage rate. Concerning sensory analysis, the formulations that pork back fat was substituted by 25 and 50% of orange albedo flour were the most acceptable for all sensory attributes and purchase intention, characterizing themselves as viable alternatives both of the nutritional and sensory aspects.Item Tuber chemical composition and acrylamide formation potential in three potato cultivars supplied with two nitrogen sources.(2016) Silva, J. G.; Araújo, Alexandra Paiva; Vieira, Silvia Mendonça; França, Marcel Giovanni CostaSome traits of potato tubers can affect their quality, contributing to potential acrylamide formation in chips. Using three potato cultivars with contrasting dry biomass and reducing sugar contents, the effects of nitrogen source and storage conditions on tuber non-structural carbohydrate and free amino acid contents were evaluated. Color and acrylamide precursors formation were also evaluated. Cultivars presented their own characteristics for accumulation of sugars and free amino acids, the nitrogen source having only a minor effect on carbohydrates and amino acids contents. Starch mobilization and free amino acid accumulation occurred in all cultivars, but one presented the greatest sugars contents after cold storage. In general, tubers having the greatest sugar and amino acids contents also presented color alteration in chips and greatest acrylamide content. Selecting potato cultivars with lower sugars content and sensitivity to cold storage could be strategies to reduce contents of acrylamide precursors in tubers that decrease chips quality.Item Use of natural yogurt, pineapple juice, and beer wort as starter cultures in sourdough combined with white and whole wheat flours to improve the technological characteristics of milk breads.(2023) Santos, Janaína Gomes dos; Ávila, Poliana Martins de; Gomes, Raphael Antônio Borges; Monteiro, Reginaldo de Souza; Vieira, Silvia Mendonça; Pereira, Patrícia Aparecida PimentaThe objective of this study was to investigate the combined effects of different types of wheat flour (whole or white) with natural yogurt, pineapple juice, and beer wort for sourdough production to improve the technological characteristics of milk breads. Seven milk breads were prepared with varying yeast fermentation and sourdough types (produced with different types of wheat flour and substrates). A physical analysis (oven jump, bread shape, crust thickness, expansion coefficient, and images of the slices), proximal composition examination (moisture, carbohydrates, proteins, lipids, and ash), and acceptability and purchase intent evaluation were then performed. The results showed that the factors under study influenced the technological characteristics of the milk breads, and that the sourdough consisting of whole wheat flour and yogurt was less acceptable. However, sourdough prepared using white wheat flour and beer wort was the most effective, being a promising alternative in the elaboration of milk breads.
